revol's right, i tried to do the same when i went round europe, the best bet is to get settled in some coffee shop with a decent jukebox and sample some of their special fungi, preferably the philipino variety though if your a novice the light mexicans are equally as tripalicious 
There's tons of squats and interesting projects in Amsterdam. You can eat in one of the squat cafes pretty much every night of the week. A lot of the more established squats are "legalised" where they pay a token amount in rent. There's also a Dutch law that occasionally works in practice whereby in order to evict squatters the owner has to prove they're actually going to do something with the property. Some squatters "register" their newly cracked dens by making sure they have a few bits of furniture (forget what, mebbe a bed and a chair?) and have changed the locks, then call the police. Theoretically this gives legal protection against stroppy, violent owners. Actually, given the bizarre nature of Dutch police it might just work...
One thing I feel in Holland is that they've almost got it too good with the whole squatting thing - there seems a reluctance to be involved in things that might rock the boat. On the other hand it has given the security and breathing space to give some really cool projects a home, and its where a group of us have ongoing medic trainings because the infrastructure is so sorted.
The Film Akademie at 301 Overtoom is pretty cool, though I haven't been there in two years so it might have changed. Its also very easy to get to.
A bit further out is the ADM which is a massive bit of old ship building land, which is now mosatly covered in grass and trees, but includes a huge hanger thing and loads of crazy projects such as ongoing yurt building. They have a bar and run occasional events, but as I went there for a specific weeklong course I don't know how it is for just visiting. Its also a bit of a hassle to get there (PM me and I'll give you directions but they're in an old email). The best thing about the ADM is wandering around the space itself and seeing how the different parts come together to make something special.http://www.contrast.org/adm/ appears to be their website, but its all in Dutch as far as I can see.
ASCII historically (though its been in lots of different buildings) is the original squat cybercafe. Good place to find out about other stuff.
I can't remember its name, but there's a famous squat vegetarian restaurant thats the yummiest food and plenty of "normal" Amsterdamese go there, so unlikely to frighten your relatives. They also have a sauna! Anyhow, once you get into the network one place leads to another, and as I've been looking up urls for you just now I've seen loads more links.
