Best cheap lunch

Submitted by Jack on 2 May, 2006 - 00:02.

I've decided I'm gonna start taking lunch into work with me instead of going out and getting a sandwich everyday.

What is good lunch that is

:> Cheap. (say max £2 for 1 days)

:> Quick to prepare. (20 mins max)

:> Filling. (and I LOVE to eat)

:> Tastes okay.

Avocado in sandwiches is great. You could also make this (very filling) salad: -

2 ripe avocados, sliced

1 or 2 ripe tomatoes, finely chopped

1 tin cannellini beans

Juice of 1 lemon

Fresh chilli to taste (I use one Scotch bonnet), finely chopped

2 cloves of garlic, crushed

Olive oil

Mix well -- if the avocado is ripe enough, it'll melt.

This is nicer if you make it the night before, giving the flavours chance to mix in the fridge. Also, the lemon juice stops the avocado from discolouring.

You could also make your own cous cous. I would tend to fry some onion, chilli, garlic & raisins, then put the cous cous in & stir it into the oil. Then add the water. Again, this will improve with age, and keep fine in the fridge.

Well, can you give me an alternative to avocado I can replace it with? angry

2 May, 2006 - 09:50

There's a really lazy way to make a salad:

steal a tupperware tub from your mum.

Chop up some lettuce tomato cucumber etc, throw it in the tub, pour in some olive oil, lemon juice and maybe a little white wine vinegar. Add a bit of pepper.

When you want to eat it just shake it about a bit so the dressing gets all mixed up and then eat with a roll or bread or something.

Irn Bru is disgusting, you people are weird.

You could grill some red peppers, and chop them finely. Actually, they're in the original recipe too, I just forgot. So maybe 3 or 4 grilled red peppers instead of avocado. And some fresh basil also.

And not arsed enough to grow it yourself, it would seem.

That's what I was doing yesterday -- planting herb & salad-leaf seeds. Before having an entertaining pub barney with the mrs that started off being about Zizek & ended up with the usual "You'll never understand what it's like to be a woman"/"Fuck off with your standpoint shit" type exchange. I love discussing politics with the mrs. sad

Ah well, at least she didn't stab me or anything. Yet. neutral

Problem with tomato is it'll make your bread go soggy by the time you eat it...

The roasted shit + houmous sounds good. But TBH vegetarian sandwiches are shit. They were my (well, second) main reason for stopping.

2 May, 2006 - 10:23

Falafel and (good) peppers are good, but get fucking boring!

John - So what was your main reason for stopping being veggie then? (A lame one I bet!)

Jack - You are too fussy with your food by far IMO! Just eat something ffs!

(LW is on a diet and a tad hungry/angsty!)

Chew your food well, it makes you less hungry.

Well seriously, I'd known for ages it wasn't making any difference, a few years, but kept being veggie out of habit. Then me + gav, who was vegan, got into a big argument with an AR person, who called us Nazis cos we thought animals and humans were different. Me and gav started eating meat again after that.

1. Go to supermarket.

2. Purchase a packaged salad (I like the garden one)

3. Put an appropriate amount between two slices of bread

4. Add some oil-based low cal dressing

5. Eat

This is a lot more faster than so called fast food, and a bit more healthier... and a hell of a lot more tastier.

3 May, 2006 - 17:06

Anyways, you guys just don't have the access to healthy food that us Bangkokians have. We have impoverished members of the proletariate who will set up a little vendor (ie; street business) selling fresh pineapple, watermelon, and other fruits. They chop the fruit up for you into bite size pieces, put it into a plastic bag sad , supply with a toothpick for the handling of the fruit - your ultimate take-away.

I started eating meat again because of some AR29675 poster on Urban75, and then because I remembered what bacon tastes like.

Cook up some short grain/pudding rice, wrap it around tuna/mayo or umeboshi or similar, then wrap that with nori seaweed sheets.

3 May, 2006 - 17:50

i had pastrami, dill mayo, gerkin and tomarto yesterday. it was meatalicious

3 May, 2006 - 19:08

I had a cheap lunch today, no fucking food!

I think I'm digesting my own stomach.

I'm so hungry I think I'm going to end up buying fried chicken and beer and feeling very bad about myself.

How long were you veg for? Cos I'm only veg out of habit nowadays and I've only been veg 3 years and I accidentally ordered something with lamb in it and I took one bite and almost threw up. Completely lost my appetite.
