What should Nemo cook?

I have:

* 1 plantain
* 1 sweet potato
* 1 fucking huge yam
* 1 red bell pepper
* As many jalapeno peppers as I have growing on the plant in the pot on my windowsill
* 1 tin black eye beans
* 1 bottle of the cheapest (white) rum I could find
* creamed coconut
* various herbs and spices (including thyme and allspice -- and enough to mix my own curry powder)
* no brown pasta

I'm thinking something with a Jamaican theme. wink Never used a yam before, so I'm not sure how to cook it.

No cake. Some sort of curry and/or stew. I would go with the button's last idea, but cheese does bad things to me!

What Nemo Cooked

I didn't use most of the ingredients, because I am saving them for a stew and/or curry tomorrow.

"Nemo's" "Jamaican" "Style" "Bangers" and "Mash" with "Baked" "Beans"

For the mash:
* Half a yam
* 1 lump creamed coconut
* 1 dollop soya marge
* 1 splash soya milk
* 1 sprinkle ground cinnamon (or nutmeg or ginger)
* couple of drips of honey
* salt and pepper to taste

Peal and cut yam into chunks, boil in water with a little salt, until soft. Drain, mash, and work in other ingredients, until soft and creamy.

For the bangers and beans:
* two veggie frankfurters
* 1 small onion, chopped
* 1 hot chili, chopped
* half a tin black eye beans
* half a tin chopped tomatoes
* 1 clove garlic, crushed
* 1 sprinkle ground allspice, ginger, coriander, dried thyme
* 1 splash rum
* couple of drops of honey
* salt and pepper to taste

Fry off the frankfurters and onion until almost cooked. Add chili and garlic and fry for a couple of minutes. Add tomatoes and beans and rest of ingredients and bring to boil and simmer for a few minutes.

Serve with a Cockney accent and sense of smug self-satisfaction.

Normally I cook up a big batch and freeze, which is what I will do tomorrow. Also, after the revolution you can work in Jack's Supernoodle factory, if you like. wink

I did think about it, actually. The stew I cooked last night isn't quite so photogenic though. Looks more like vomit. Rustic, I think they call it. Tastes alright though.

you should have mashed the plantains and yams, rolled them into balls and fried them in peanut oil, and then served them with rice and spicy coconut sauce. Thats what I would have done.
