A union for IT "professionals" that only has a conference every two years? I'm not familiar with them and the website is a bit vague, so any experiences, references or anecdotes posted will be greatfully recieved.

80% or so of Connect is the union of BT managers. They don't have a particularly nefarious record as far as I'm aware in terms of their members, but that's probably because their members don't tend to take very much action.
I think they may be merging with Prospect?
You could probably join CWU or - depending on where you take - Unite, both of which take miscellaneous IT workers.
