Does anyone know if any of the unions which call themselves anarch-syndicalist, wether in fact or fiction, were engaged/involved?

There is a 4th union on the work council, CSIT. I don't know anything about them except that they aren't CCOO-UGT, but from their web page they look like an independent union of mostly government employees, calling themselves a "professional union." They say they are the second biggest union for the Madrid regional government.
On the plant committee, CGT have 6, CSIT have 5, and CCOO-UGT have 4 each, if that gives some idea. From what I understand the strike was actually called through an assembly, rather than from the work committee itself, and is the first amazon strike in Europe that was called by assembly.

The big question now is whether or not they will work Saturday and Sunday for 9 hours each, because Amazon wants to use a clause of the collective agreement to force them to make up the time.
The only other comment is that unions that maybe once aspired to more radical politics usually get sucked into the mainstream role if they try to be representative unions. This is certainly not limited to any one particular union. I certainly would agree that what is lacking is more rank and file initiatives. However, having experience with this, including with the comrades who organized for some while in the same international workplace, it should be pointed out that this is a very difficult task, especially when the unions undermine the rank and file groups, which I see tends to happen wherever they appear. At least this happens here, so I can say that many unions act as a force to control workers and moderate and dissuade their radicalism in favour of playing by the unfavourable rules set out by the law.
